INTRODUCING GAYAN and NATHAN

Cellar Maison are delighted to introduce a collaboration that will open exciting doors for our network of existing Cellar Maison clients – and all those interested in wine and food!

Please meet Marina Gayan and Helen Nathan, the incredible team who have developed Gayan & Nathan, an exclusive and unique wine advisory business that takes wine selection, education and palate profiling to a whole new level.

Both Marina and Helen have impressive credentials, qualifications and experience in the wine and food field. Their combined talents are thankfully now accessible through the events and services they have created.gayanandnathan_B:CD_11MAY15

Marina Gayan, MW, completed her Master of Wine in 2003 – An extremely rigorous training programme and commitment. There are in fact, currently just over 350 MW in the entire world. It’s a truly extraordinary status to hold and one which Marina shares with endearing warmth and generosity to her clients and guests.

She has contributed articles to Decanter magazine and has been an IMW (Institute of Masters of Wine) examiner for six years and continues to be involved in its education programme.

Helen Nathan comes with over 15 years of experience in the wine field and was formerly a chef in Claridges. She is a published author of four successful cookery books and currently owns and runs a South West London Cookery School. With food as her obvious passion, Helen’s skills perfectly compliment Marina’s. Their wine events, services and offerings are without a doubt, uniquely delicious, educational and inspiring!

Marina and Helen beautifully blend luxury with a down to earth approach for enjoyment, knowledge and ease with wine on an individual level.

Gayan and Nathan offer a bespoke personal wine shopper service which includes Individual Wine Profiling, Cellar Stock Management and Tailored Tastings and Private Celebrations.

One stand-out point of difference, is their development of an exclusive way to introduce their clients to wines they will love. Sounds simple but looking into it further, we see how well Gayan and Nathan have evolved from the traditional concepts of wine education and wine and food matching.

Traditional wine pod (1) (Copy)

The Gayan and Nathan approach is driven by the profiling of their individual clients’ palate choices – rather than pre-conceived ideas about wine, perceived geographic preferences, prices or labels where it’s easy for even the most seasoned wine collector to become stuck or rigid thus missing out on some incredible revelations.

Gayan and Nathan’s specialist Palate Profiling, is a fascinating concept – To explore your palate with such an emphasis on your own unique taste in both wine, and the food you personally enjoy with it. This allows any wine collector, enthusiast or novice to engage deeply with their wine and food and evolve to a true understanding of their tastes, as well as enjoying the intriguing nuances and individual tastes of others.

design-planner-cellar-maison

We will shortly be bringing you news of exclusively tailored Cellar Maison and Gayan and Nathan events. Plus, information that directly relates to your wine collection – How best to cellar your wine and add to your collection, as well as the all important enjoyment of tasting your wine and creating heavenly food to best compliment your personal tastes.

Sometimes we come across extraordinary people, living their passion, following a dream or just doing something absolutely great with wine. Cellar Maison have a strong connection with New Zealand – director, Andrew Speer is from the beautiful wine region of Nelson, bordering the widely known Marlborough region. When we heard that someone had opened a specialist wine shop in London selling the best NZ wine – we naturally wanted to know more!

Meet the lovely Mel Brown, the creative driver of The New Zealand Cellar, London’s very own Kiwi wine boutique, bar and online store.

Hear Melanie’s fascinating story, along with some NZ wine tips, plus more about their events and consultancy services for restaurants and bars, as well as for home owners setting up their own cellar.

Nelson

Nelson, New Zealand

Mel, where are you from in NZ?

I grew up in Auckland, but spent 5 years in Christchurch completing a Chef Apprenticeship before moving to London.

How did your interest in wine develop?

Slowly and very late on, after moving to front of house at The Providores (London’s most iconic Kiwi restaurant) I was completely in awe of the wine offering and this ignited my passion. I studied my WSET soon was living and breathing all things NZ wine.

What brought you to London – and eventually inspired you to start your New Zealand wine business?

I was on my OE, ready to learn and discover new cultures and cities. Initially it was all about the food, but before long my love of wine was introduced and I was quickly eating and drinking my way through Europe. Whilst working at The Providores I became increasingly aware of the lack of platforms in which you could buy NZ wine. I wanted customers to enjoy these wines at affordable prices, I wanted to support the vineyards and producers that work tirelessly, by creating an exciting and specialist platform that was able to convey the integrity of the stories and wines within it.

How has The New Zealand Cellar been received by Brits?

Amazingly! It seems the Brits go crazy for NZ wine. With the highest average bottle price of any other country in the world, the Brits certainly know NZ’s reputation for quality wine is a given.

You sell wine online, and now also in your Brixton store – What sort of experience do you like to give customers coming in person to shop for wine?

For me it’s always about awakening the senses, encouraging customers to look past Sauvignon (not that we don’t love it) but showcasing that NZ can produce an array of styles and varietals that aren’t currently in the spotlight. Its about creating a relaxed, informal and approachable way to enjoy wine, but also offering education and fun.

What are your thoughts on New Zealand wine compared with wines being produced in Europe?

Stylistically they are very different, NZ is such a young and dynamic wine producing country with bright fresh examples, whilst Europe is capable of producing some extremely elegant developed wines of elegance and poise. Each has its own place, and can be enjoyed with so many different foods.

Can you please give us some inside info?

Watch out for NZ Chardonnay, linear, driven and so delicious.

What are a couple of your favourite wines to drink now?

I’m in love with the North Canterbury region right now, these wines are amazing:

http://thenewzealandcellar.co.uk/2014-black-estate-riesling.html

http://thenewzealandcellar.co.uk/2014-the-hermit-ram-pinot-noir.html

Have you some good recommendations for wine to cellar?

Good Pinot Noir from NZ is ageing gracefully, I’ve definitely got a collection in my cellar!

Do you have a favourite New Zealand wine and food combination that is available to UK readers?

Yes, check out Peter Gordon’s page in our Cellar Press!

Are you able to assist with curating a New Zealand section of a private wine cellar or collection?

We offer many tasting and cellaring services. These are bespoke and are quoted to your individual needs. ~We work with clients to determine their exacting requirements. A lot of the time we end up hosting corporate events and private tastings as a result of working with people in their personal cellars. This is definitely one of the most rewarding tasks, particularly when you can see the impact this makes by allowing these producers to be recognised.

What services do you offer to bars or restaurants wishing to have high quality selection of New Zealand wine on their lists?

We also offer a consultancy service, and can happily advise on a NZ wine element of any list. We work closely with many distributors and producers throughout London and can provide an intelligent and thoughtful offering.

Cellar Maison – Wine Bar Feature: Our new section celebrates wonderful wine bars and restaurants where you can enjoy a well curated wine list – with great food as well of course.

This edition is about the stunning 28°-50° Wine Workshop and Kitchen in London’s stylish Mayfair.

maddox main room

Named after the latitudes within which most of the world’s vineyards are located, the 28°-50° Wine Workshop and Kitchen takes the traditional wine bar experience to a new level. 28°-50° Maddox Street, the third in the collection of three sites, opened in the heart of Mayfair in 2013.

Owned by Michelin star Chef Patron Aggi Sverrisson of TEXTURE, 28°-50° provides a relaxed and informal dining experience from a modern-European, seasonally focused menu. Guided by Group Operations Director Sid Clark, previously General Manager of Gordon Ramsay’s Maze restaurant, and Group Head Sommelier Clement Robert MS, Maddox Street has one of the most unique wine lists in London, featuring a range of over 30 traditional and eclectic red and white wines available by the glass, carafe or bottle at exceptional prices. 28°-50°  Maddox Street also offers a specialist ‘collector’s list’ which showcases fine wines from private collectors, offering guests a chance to discover more unusual and mature wines at their peak – some of which are rarely seen in other restaurants.

Set over two floors, the kitchen is home to the groups first ever Champagne bar offering a choice of 25 varieties. Downstairs, guests are welcomed by a wine display and open kitchen, providing a perfect space for private parties and group events. The workshop and kitchen’s stylish interior features reclaimed timber as a reference to the wine barrels used in the ageing and fermentation process, whilst soft leather upholstery is countered by industrial finishes on furniture and storage, with marble and bespoke tiles adding a final touch of luxury to the space. Both levels have seating for 50 covers and there is additional outdoor space with terraces to the front and rear for those who wish to ‘wine and dine’ al fresco during the warmer months.

Version 3

The menu, created by Executive Chef Justin Leclair, together with Aggi Sverrisson, offers simple, seasonal modern European food. Working only with the finest ingredients, freshly sourced both locally and from around Europe to maximize on varying seasonality, the menu changes frequently, so Mayfair diners can look forward to new dishes on each visit, all of which pair beautifully with interesting wines from the collection. Sample dishes include: crab tortellini in a miso broth or grilled octopus with chorizo, new potatoes, piquillo peppers and radicchio to start; slow cooked pork collar with charred calcot onions, mouli and red cabbage salad and coriander; 28 day aged English Rib Eye steak; or seared scallops with pickled cauliflower, black pudding and samphire and sides of truffled cauliflower cheese for mains; and pistachio crème brûée or dark chocolate cremeux with peanut and toffee crunch and banana ice cream for pudding.

If you fancy something a bit lighter to accompany a glass of wine, the menu offers snacks and small bites, including Maldon rock oysters, mini pulled pork burger, signature BBQ pork crackling, charcuterie boards and sharing seafood platters – the perfect partner to a glass of Champagne.

Like its siblings, on Fetter Lane and Marylebone Lane, 28°-50° Maddox Street offers an exciting wine tasting programme, workshops and themed dinners throughout the year in addition to a specialist wine cellar club on Saturday’s from 12-5.30pm, where guests can taste some of the world’s finest and unique wines by the glass, such as Chassagne Montrachet, Meursault, Bordeaux Cru Classe with prices less than £10.00 per glass.

When form and function meet in pure perfection. In a unique collaboration, renowned glass artist, Brian Hirst, has teamed up with Italian sommelier and wine extraordinaire, Giorgio De Maria to create stunning, hand made glass decanters that are designed precisely and ergonomically to suit the wine and the person pouring. The end products are a must-have for every cellar and dining table.

G+B Decanter - Brian Hirst

These extraordinary wine vessels are self-described as designs inspired by “the asymmetrical shape and the organic feeling”.  Their selection of signature designs are both quirky and practical, beautiful pieces of art that are perfect to use. The indentation for the thumb, with the fingers positioned at the bottom of the vessel, allow a controlled pour, while the neck and bowl dimensions ensure the wine can breathe appropriately before serving.

Each decanter is hand made, mouth blown and exquisitely crafted and therefore each is unique with its own particular qualities and feel. These decanters are decidedly collectable and make a wonderful gift for any true wine lover. The good news is, you may order online and receive your decanter carefully wrapped and safely delivered from Brian Hirst’s Sydney studio, to your door, worldwide.

Here is a link to Brian Hirst and Giorgio De Maria’s website and details of how to order decanters online. As you may guess, demand for this dynamic duo’s wonderful decanters is high, from both private customers and high-end wine bars and restaurants.

To find out more about Brian Hirst, you can have a look here at his very impressive life-time as an award winning glass artist and print maker.

Giorgio De Maria, is a well-known proponent of natural and low intervention wines and along with a handful of others passionate in this field, created the annual Sydney festival of international natural wine and sustainable, organic food – Rootstock.

Cellar Maison are always, keen to share news of artisan and boutique, high quality wine related products. A popular feature our customers ask for in their bespoke Wine Cellars and Wine Pods is a tasting table or custom made bar where wine can be opened and enjoyed within the space. Displaying and using optimum glassware and decanters for carefully collected wine brings a special element to the experience. Wine Walls or the smaller dimension Pods or Cellars can have glassware and decanter storage built in as well. Back lighting and the unique Cellar Maison frameless glass doors provide perfect display conditions for both the wine and the accessories within.
